Soil : steep slopes of schist near Banyuls, between 10 and 130 meters in altitude.
The old vines are planted following a high-density system and we can find several types of grapes in the same parcel.
Grape variety : Grenache gris.
Low volumes harvested by hand.
Grapes are vinified with great care, they’re slowly pressed to keep all the best.
Aged 8 months in oak barrel. Bottled at the end of March.
This pure Grenache gris could be compared to a “blanc de noir”.
In his youth, he can be quite austere but with few years he might develop his true personality with more density.
It can be paired with land-and-sea cooking as monkfish tail with chorizo.
