The Vines

Soil : black schist and schisty marls.in Agly Valley.
Grape variety : Grenache noir.

The Wine

Alcohol is added to whole grapes in tank to stop fermentation before a long maceration.
Aged in oak barrels in oxidativ environment.
The wine is a blend of many vintages in the same way as Soleras.

Tasting

Nose : strawberry, blackberry, sherry aromas, who evolving on cacao, gingerbread, liquorice and plums notes with age.
Mouth : generous, mineral, round, well balanced.
Food pairing : Roquefort, ripened goat cheese, walnut tart or chocolate desserts.
Service : between 13 and 16°c.
