The Vines

Old vines on schist around Maury. There we can find several types of grapes in the same parcel.
Grape variety : Grenache noir.

The Wine

Grapes harvested by hand. Fermentation in tank, then stopped by adding neutral alcohol in a view to obtain 90 grams of residual sugar per liter.
Aged in tank for 10 months.

Tasting

Eyes : garnet colour.
Nose : rich, aromatic, candied fruit, cacao, roasted notes.
Mouth : intensive, tonic, harmonious with plums, quince and cacao flavours, round tannins.
Food pairing : in appetizer, with blue cheese and dark chocolate.
